Summer Peach Clafoutis
Clafoutis is a French baked custard dish, classically made with cherries, but any soft fruit will work! This one uses yogurt in place of milk to boost the protein, and oat flour instead of wheat so that it's gluten free. Serve warm from the oven, or after chilling overnight for a delicious an unexpected brunch item!

Ingredients
  • 4 large peaches
  • 6 large eggs
  • 2.5 cups plain or vanilla yogurt (do not use greek; if using plain, add 1/4 c sugar)
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 cup oat flour
  • 1 Tbsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 tsp butter or oil for greasing the pan

  • 1 cup oat flour

  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1 tsp butter or oil for greasing the pan
Instructions
  1. Whisk eggs, yogurt, sugar, salt, extract oat flour, and spices together in a mixing bowl, and chill in the fridge for 15 minutes. Preheat oven to 350F. Cut peaches into slices, place half in the bottom of a greased 9" springform pan (or other high-sided pan). Pour in batter, then top with remaining peaches. Bake for 45-55 minutes until the top is golden and firm to a gentle shake. Run a knife around the edge immediately, and remove the springform sides when cooler.
