Whisk eggs, yogurt, sugar, salt, extract oat flour, and spices together in a mixing bowl, and chill in the fridge for 15 minutes. Preheat oven to 350F. Cut peaches into slices, place half in the bottom of a greased 9″ springform pan (or other high-sided pan). Pour in batter, then top with remaining peaches. Bake for 45-55 minutes until the top is golden and firm to a gentle shake. Run a knife around the edge immediately, and remove the springform sides when cooler.
