Chocolate peanut butter coconut energy bites
Don't let the main ingredient fool you - chickpeas are a very flavor-neutral and taste like the cocoa and coconut flakes! These chewy bites are perfect for an afternoon snack or to refuel after a workout.

Ingredients
  • 15 oz chickpeas canned, drained
  • 2 Tbsp cocoa
  • 2 Tbsp powdered peanut butter (can also use regular peanut butter and adjust water)
  • 1 medium banana
  • 10 medjool dates
  • 1/2 cup oats
  • 1/4 cup water (if needed)
  • 1 Tbsp coconut oil
  • 1 cup sweetened coconut flakes

  • 1 medium banana
  • 10 medjool dates
  • 1/2 cup oats
  • 1/4 cup water (if needed)
  • 1 Tbsp coconut oil
  • 1 cup sweetened coconut flakes
Instructions
  1. Pulse all ingredients (except the coconut) in a blender or food processor until evenly mixed. You might have to scrape down the sides a few times; I added a bit of water to make it less dense. Chill in a bowl in the fridge for an hour, then roll into balls and coat with coconut. Makes 12 golf-ball sized bites.
