Blueberry Lime Breakfast Bars
If you have some leftover quinoa on hand, pop it into this batch of breakfast bars! Theyre soft and sweet, with a fiber rich boost!

Wet Ingredients
  • 2 large eggs
  • 3/4 cup applesauce
  • 1/3 cup sugar of choice
  • 2 Tbsp lime juice
  • 3 Tbsp sun butter (or other nut butter)
Dry Ingredients
  • 1 1/2 cup rolled oats
  • 1 cup cooked quinoa
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 lime's zest
  • 1 1/2 cups fresh blueberries
  • 2 Tbsp granulated sugar (for sprinkling on top)

Instructions
  1. Preheat oven to 350F. Line a 9x9 baking pan with parchment paper. Combine wet ingredients in a blender and puree until smooth. Combine all dry ingredients in a separate bowl and stir until evenly mixed. Add wet to dry, folding to mix. Pour the blended mixture over the parchment paper into the pan, sprinkle topping sugar, and bake for 30 minutes in the center of the oven. At the very end, broil from a distance of 8-10 inches to caramelize the sugar on top. Cool, then slice into 12. Nutrition: 170 calories, 28g carb, 9g sugar, 6g protein, 3g fiber, 4.5g fat
