Orange & oat scones with lemon sugar glaze
These fast & easy scones make a great accompaniment for morning coffee, an afternoon snack, or a healthy dessert with an evening cup of tea.

Ingredients
  • 1 cup oats (ground in a food processor, or use oat flour)
  • 1 cup whole wheat flour
  • 1/2 cup white flour
  • 4 Tbsp butter (cold)
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1/2 cup milk
  • 1 medium orange's zest
  • 1/3 cup mini chocolate chips
Lemon glaze
  • 1 Tbsp lemon juice
  • 3 Tbsp granulated sugar (cane or sugar in the raw work well)
  • 1 Tbsp canola oil

  • 1 cup oats (ground in a food processor, or use oat flour)

  • 1 Tbsp baking powder
  • 1/2 tsp salt

Lemon glaze
  • 1 Tbsp lemon juice
  • 3 Tbsp granulated sugar (cane or sugar in the raw work well)
  • 1 Tbsp canola oil
Instructions
  1. Preheat oven to 425F. Blend the oats, flours, baking soda and salt in a blender (or bowl, by hand). Add the butter and use a dough setting on the blender, or a fork or pastry cutter to incorporate into flour. Place in a bowl, then stir in zest and chocolate chips. Mix egg and milk, then pour into dry ingredients and stir until evenly mixed – don’t over-blend! Drop with a spoon onto a baking sheet (leave lots of space, see below!), then mix the lemon glaze ingredients separately in a small bowl and brush on to the tops of the unbaked scones. Bake for 12-15 minutes.
