Ingredients
- 1 avocado
- 1 medium cucumber skin on, seeds in
- 1 whole scallion green & white part
- 1 cup green grapes
- 1 small clove garlic
- 2 Tbsp sherry vinegar
- 8-10 large mint leaves julienned (reserve some for garnishing)
- 1 cup water
- 1/2 lemon's juice
- Dash salt to taste

- Scoop out avocado, discard skin & pit, and combine with all other ingredients in a high speed blender or food processor, pureeing until smooth. Garnish with remaining mint, optional greek yogurt & toasted nuts.
