1avocado
1medium cucumberskin on, seeds in
1wholescalliongreen & white part
1cupgreen grapes
1small clovegarlic
2Tbspsherry vinegar
8-10largemint leavesjulienned (reserve some for garnishing)
1 cupwater
1/2lemon’s juice
Dashsaltto taste
Instructions
Scoop out avocado, discard skin & pit, and combine with all other ingredients in a high speed blender or food processor, pureeing until smooth. Garnish with remaining mint, optional greek yogurt & toasted nuts.
