Chocolate peanut butter coconut energy bites
Don’t let the main ingredient fool you – chickpeas are a very flavor-neutral and taste like the cocoa and coconut flakes! These chewy bites are perfect for an afternoon snack or to refuel after a workout.

  • 15oz chickpeascanned, drained
  • 2Tbsp cocoa
  • 2Tbsp powdered peanut butter(can also use regular peanut butter and adjust water)
  • 1medium banana
  • 10 medjool dates
  • 1/2cup oats
  • 1/4cup water(if needed)
  • 1Tbsp coconut oil
  • 1cup sweetened coconut flakes
  1. Pulse all ingredients (except the coconut) in a blender or food processor until evenly mixed. You might have to scrape down the sides a few times; I added a bit of water to make it less dense. Chill in a bowl in the fridge for an hour, then roll into balls and coat with coconut. Makes 12 golf-ball sized bites.
