Avocado & green grape gazpacho

Ingredients
  • 1 avocado
  • 1 medium cucumberskin on, seeds in
  • 1whole scalliongreen & white part
  • 1cup green grapes
  • 1small clove garlic
  • 2Tbsp sherry vinegar
  • 8-10large mint leavesjulienned (reserve some for garnishing)
  • 1 cup water
  • 1/2 lemon’s juice
  • Dash saltto taste
Instructions
  1. Scoop out avocado, discard skin & pit, and combine with all other ingredients in a high speed blender or food processor, pureeing until smooth. Garnish with remaining mint, optional greek yogurt & toasted nuts.
